Rainbow trout fillets with skin on, brined with Wildbrumby Gin botanicals, then smoke in Alpine Ash that we source from near our property. Our slow hot smoking technique ensures the fish remains moist with a beautiful texture. An occasional tang from juniper or native wild mountain pepper berry makes our trout special.

A portion of trout is perfect for an antipasti platter – just add some of our capocollo, bresaola, smoked chicken, a couple of olives and some cheese.
